Production of Isomaltooligosaccharides Using Immobilized Transglucosidase

The focus of this project was to optimize a procedure for immobilizing the enzyme tranglucosidase on a solid matrix to be used for isomaltooligosaccharide (IMO) production.  Isomaltooligosaccharides are prebiotics that benefit colon health and can be added to many food products.  The use of the immobilized enzyme makes the production of IMO more efficient.
