Research: Genetic selection techniques focus on carcass merit in beef and lamb; cooking methods to prevent warmed over flavor in beef; effect of marbling class on consumer evaluation of beef; effect of marbling class on wet and dry ageing of beef . Statistical evaluation of livestock and meat judging on student performance. Nutritive value and meat yield evaluation of North Dakota game species.
