WHEAT QUALITY & CARBOYHYDRATE RESEARCH

Project Overview

Dr. Simsek has been conducting research and supervising activities on structure-function relationships among bio-macromolecules (particularly starch and non-starch polysaccharides) found in cereal and food systems. More specifically: 

  • Application of HPLC, GC-MS, UPLC, LC-QTOF, and NMR in structural studies of carbohydrates and polysaccharides
  • Wheat Quality
  • Food and Health
  • Starch Chemistry and Digestibility

Research Mission

To develop a nationally acknowledged laboratory of excellence in the broad field of Wheat Quality & Carbohydrate Research by performing integrated high-level fundamental, strategic research, as well as related application oriented research, within the scope and mission of North Dakota State University.
