A new paper from the Bergholz Lab reports on the thermal resistance of Salmonella serovars on flaxseeds

The work examined the survival and thermal resistance of 32 strains of Salmonella from four serovars (Agona, Enteritidis, Montevideo, and Tennessee) on flaxseed over 24 weeks. Thermal resistance was determined at 71 C and four time points using vacuum steam pasteurization.
