NDSU’s 800 Café is scheduled to serve “Rise and Shine Brunch.” The meal is set for Thursday, April 20, and Friday, April 21, in the Food Production Complex on the third floor of the Katherine K. Burgum Family Life Center. Seating will be from 11 a.m. to 12:15 p.m.

The menu for the meal includes:

·      Grilled peach and pineapple fruit skewer served with a honey yogurt dipping sauce.

·      Baked salmon and vegetable frittata with grape tomato halves and fresh parsley.

·      Toasted whole wheat English muffin slice topped with chokecherry jam.

·      Vanilla Greek yogurt parfait with dark chocolate avocado mousse, chopped roasted nuts and a sprinkle of sea salt.

Dietetics students Alexis Allen and Morgan Cote will manage the meal with the help of their classmates.

The cost is $10 per person and includes beverages. Four-meal punch cards are available for $35. Cash or check are acceptable forms of payment.

Walk-ins are welcomed, but reservations are preferred due to limited seating. The café is open to the public and parking is available in NDSU’s visitor lot.

The 800 Café is operated by NDSU dietetic students and will be open for lunch on Thursdays and Fridays through May 5. Sherri Nordstrom Stastny, associate professor of health, nutrition and exercise sciences, is the class instructor.
