800 Café to host ‘Fiesta Fresca’ meal

SHARE

The NDSU dietetics program’s 800 Café is set to present a “Fiesta Fresca” take-out meal Thursday, April 15, and Friday, April 16.

Junior dietetic students Jenna Rachey and Hallie Mann have organized a fresh take on a Mexican inspired meal.

The starter is a fruit kabob with cinnamon yogurt dipping sauce made with Greek yogurt, honey and cinnamon. The entrée is a meatless burrito bowl with cilantro lime rice, sauteed fajita vegetables, fresh guacamole and fresh mango salsa. The dessert is a chocolate “war” cake, made without eggs, butter or milk. The ingredients were rationed during World War I and II, giving the dessert its name.

Meal pick up is in the Katherine K. Burgum Family Life Center room 312 from 11 a.m. until 12:15 p.m. Each meal costs $10 per person, or a four-meal punch card can be purchased for $35. Payments can be made in cash or check at the door when picking up your meal. With limited meals available, reservations are preferred but walk-ins are welcome, if there is availability.

Sign-up Genius reservations are preferred, but reservations also can be made by contacting nancy.moberg@ndsu.edu or by calling 701-231-7474. When making your reservation, make a note of any allergies of your attendees and accommodations can be made.

The class is instructed by Sherri Nordstrom Stastny, professor of health, nutrition and exercise sciences.

Parking is available in the visitor’s pay lot on the south side of the Memorial Union on campus.
