Crispy Parmesan Edamame


A twist on edamame.



  • 1 (12-ounce) package frozen shelled edamame, thawed
  • 2 tablespoons olive oil
  • ¼ cup Parmesan cheese, grated
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste


Preheat the oven to 400 F.

In a bowl, toss the edamame with olive oil to coat. In a separate bowl, mix the cheese and garlic powder. Add salt and pepper if desired. Add the edamame and toss, coating evenly.

Spread the edamame mixture on a rimmed baking sheet and bake, turning once halfway through, until the cheese starts to brown (about 10 to 15 minutes).

Store in an airtight container in the refrigerator.

Dietary and Nutrition


Edamame provides vitamin A, vitamin C, iron and other vitamins and minerals. One-half cup of shelled edamame provides 120 calories and 9 grams of fiber.
