Rosemary Apple Pecan Chicken Salad

The perfect light chicken salad for lunch or a picnic.

Ingredients

Ingredients

  • 1 pound boneless, skinless chicken breast, cooled and diced
  • 1¼ cups apples, chopped
  •  ⅓ cup pecans, chopped
  •  ⅓ cup dried cranberries

Dressing Ingredients

  • 1 (5.3-ounce) container fat-free plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon red wine vinegar
  • 2½ teaspoons fresh rosemary, finely chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • ½ teaspoon onion powder
  • Salt and fresh ground black pepper (to taste)

Directions

Combine chicken, apples, pecans and cranberries in a large mixing bowl. In a separate, small mixing bowl, stir together dressing ingredients. Season with salt and pepper. Pour dressing over chicken mixture and toss to coat evenly. Serve on lettuce or whole grain bread.
