Rosemary Apple Pecan Chicken Salad

1 lb. boneless, skinless chicken breast, cooled and diced
1 1/4 c. apples, chopped
1/3 c. pecans, chopped
1/3 c. dried cranberries
 

Dressing Ingredients

1 (5.3-oz.) container fat-free plain Greek yogurt
2 Tbsp. mayonnaise
1 Tbsp. red wine vinegar
2½ tsp. fresh rosemary, finely chopped
1 tsp. Dijon mustard
½ tsp. honey
½ tsp. onion powder
Salt and fresh ground black pepper (to taste)

Directions

Combine chicken, apples, pecans and cranberries in a large mixing bowl. In a separate, small mixing bowl, stir together dressing ingredients. Season with salt and pepper. Pour dressing over chicken mixture and toss to coat evenly. Serve on lettuce or whole grain bread.
