Grated Carrot-Onion Salad

Want to try a salad with a lime twist? The natural sweetness of carrots and the crunch of diced onions, combined with the tanginess of lime juice, make it very tasty and refreshing! This can be eaten as a snack or as a side dish.

  • 2 cups carrots, grated
  • ¾ cup red onion
  • Few stems of cilantro
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lime, juiced

Directions

Grate the carrots and place them into a bowl.

Dice the red onion and add it to the bowl.

Add salt, black pepper and lime juice.

Mix until all ingredients are evenly combined. Gently stir in the chopped cilantro.

Serve as a side to rice or enjoy as a snack.
