Spicy Potato Stir Fry
This is easy to make, spicy and delicious! It pairs well with hot rice or flatbreads like roti or paratha.
Ingredients
- 2 tablespoons vegetable oil
- 9 medium sized yellow potatoes
- ½ teaspoon black mustard seeds *
- 1 teaspoon urad dal (split white lentils) *
- ½ teaspoon asafoetida *
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon salt
- Curry leaves or Cilantro

Directions
Peel the potatoes and cut them in half. Place the halved potatoes in a pressure cooker and cook for 12 minutes.
Remove the potatoes from the pressure cooker and cut them into 1-inch cubes.
Heat a skillet over medium heat and add the oil. Add the mustard seeds, asafoetida, curry leaves and urad dal. Cook until the dal turns golden brown. Add the diced potatoes and stir occasionally for 1-2 minutes. Add the turmeric powder, red chili powder and salt. Stir the spices with the potatoes until evenly coated.
Continue stir-frying until the potatoes are golden brown.
Remove from heat and garnish with chopped cilantro, if desired. Serve stir-fried potatoes as a side to rice.
