Welcome to Food Preservation 101!

NDSU Extension and Cankdeska Cikana Community College have partnered to bring you six educational modules on food preservation!

About The Course

  • Take this FREE course completely online, at your own pace and from your own home.
  • Lessons are prerecorded.
  • Course topics include Drying, Fermenting, Water Bath Canning, Pressure Canning, Freezing and Foraging.
  • To access the course, participants must register to receive an enrollment code. Once participants have the code, they can enroll in the course on the Extension Foundation website.
  • Participants will receive certificates of completion for completing modules.

Fall Session Schedule

  • Registration opens September 1, 2025
  • Enrollment/course begins October 1, 2025
  • Last day to enroll is November 17, 2025
  • Course ends January 15, 2026 (all modules must be completed)

Winter Session Schedule

  • Registration opens January 1, 2026
  • Enrollment/course begins February 2, 2026
  • Last day to enroll is March 15, 2026
  • Course ends May 15, 2026 (all modules must be completed)
