NDSU Extension and Cankdeska Cikana Community College have partnered to bring you seven educational modules on food preservation!

About The Course

  • Take this FREE course completely online, at your own pace and from your own home.
  • Open to everyone! (You do not have to be a North Dakota resident to participate)
  • Lessons are prerecorded.
  • Course topics include Drying, Fermenting, Water Bath Canning, Pressure Canning, Freezing, Foraging and The History and Usage of Herbs.
  • To access the course, participants must register to receive an enrollment code. The code will be sent to their email after enrollment opens on the Extension Foundation website. See the schedule below to learn about open enrollment windows.
  • Participants will receive certificates of completion for completing modules.

Spring/Summer Session Schedule

  • Registration opens May 1, 2026
  • Enrollment/course begins June 1, 2026
  • Last day to enroll is July 15, 2026
  • Course ends September 15, 2026 (all modules must be completed)

Fall Session Schedule

  • Registration opens September 1, 2026
  • Enrollment/course begins October 1, 2026
  • Last day to enroll is November 16, 2026
  • Course ends January 15, 2027 (all modules must be completed)
